Recipe Submitted by the RidgeView Bed & Breakfast
2 cups flour
1 cup butter (I think this is too much but that is what it calls for) at room temp or cut into or cut into ¼ pieces
3-4 tbps dry marsala
1 tsp freshly grated lemon peel
½ tsp salt
Put all ingredients in a food processor. Pulse at first and then let it run until a ball forms. Take the dough out of the processor. I cut about 1/3 off and then made 2 disks. Put in fridge for at least one hour.
5 cups ricotta (this is about 2 – 2 lb containers).
½ cup sugar ( I used less than ¼ sugar and less than ¼ cup Splenda)
2 Tbsp. flour
½ tsp salt
1 tsp freshly grated orange peel
4 eggs slightly beaten
2 tsp ground pine nuts ( I picked up the wrong package and I used slivered almonds, not ground)
1 tbsp Gran Marnier or other liquor
Beat ricotta cheese until creamy and add balance of ingredients and beat until well combined. I added 1 cup golden raisins
Roll Pastry (larger ball) 1/8 inch. I used a 10 inch pie glass pie dish. Put in filling. Roll rest of pastry and cut in ½ inch strips.
Bake in 350 degree (How do you make a degree symbol?). for about an hour or until golden and knife comes out clean.
